What I've Been Eating: February

Let me start off by saying I'm no chef at all (my grandfather is so I do know a few tricks & tips from him)! I find myself getting into "ruts" when it comes to cooking. Which is a pain especially with having celiac because I have to cook just about everything. However, I've discovered some recipes that I find my self making twice a month which doesn't sound very often but it is. I try to switch things up so every week so I don't get bored. I figured I could share some of the recipes that I've found to be really yummy and pretty good for you too.

6. Avocado with Chips


I add salt, pepper, cayenne, and red pepper flakes to the top

7. Homemade Fajitas and Salsa



So delicious and so yummy! I'll also make a chunky guacamole and pico de gallo to go along with it!

8. Gluten Free Avocado Toast


I like to add salt, pepper, cayenne, and red pepper flakes. Sometimes I eat it plain and sometimes I eat it with an egg on top depending on my mood.

*made with gluten free bread, bagels, and english muffins

9. Eggs with Potatoes


I roast some potatoes with olive oil, salt and pepper in the oven at 400 for 20-30 minutes. While the potatoes are cooking I cook an over easy egg in coconut oil with salt, pepper, paprika, and cayenne.

11. Larabars with San Pellegrino



I have been craving cookie dough anything since finding out I have gluten free and nothing has come close to it for me but these chocolate chip cookie dough bars are LIFE right now. Plus I'm addicted to the coconut cream pie and peanut butter chocolate chip bars are so good too. Also you can't go wrong with a cold bottle of San Pellegrino. Makes a great snack on the go.

*I buy my Larabars at Kroger and can usually get them 10 for $10
