What I've Been Eating: August

I haven't done a What I've Been Eating in awhile but I've been really inspired in the kitchen recently and these post give me inspiration when I can't figure out what I wanna cook. Some are recipes from Pinterest and others are what my papa and I come up with.

1. Mango Salsa Salmon

This is my new favorite meal to make. It's mango salsa salmon, I copied my best friend with what she cooked for me one night but HERE is recipe I found that is extremely similar.

2. Wild Rice & Chicken Soup

I was so sick and this soup always makes me feel really good. The recipe for this wild rice soup is HERE.

3. Strawberries and Almond Whipped Cream

This is one of my favorite desserts. Strawberries and whipping cream but with a twist. I cut up a box of strawberries & add some sugar to them. Then I whip up some whipping cream & add a tablespoon of powder sugar and a few drops of almond extract. Y'all this is SO GOOD!!

4. Baked Chicken Wings

Y'all these wings were SO good. It was my first time ever making wings and they will definitely be happening for game nights. HERE is the recipe.

5. Strawberry Waffles

Breakfast waffles! Vans gluten free waffles, strawberries, and syrup. Super easy and super quick.

6. Stir Fry

Stir fry! Honestly, I didn't cook this one. My papa cooked it for me when he came into town. I'm not totally sure what he used to make this but this one looks S'GOOD!! Pretty sure I'm gonna make this for Eric and I tonight.

7. Fajitas and Homemade Guacamole

This was the preparation for fajita night. This is the fajita recipe I swear by HERE. For my guacamole I use 2 avocados, 1 Roma tomato, 1/2 red onion, cilantro, and salt. 

8. Avocado Toast

Is it really a What I've Been Eating without avocado toast?? It will probably be every single WIBE. Not to mention it is SO easy to make. Udi's bagels, avocado, salt, pepper, and crushed red pepper flakes.

9. Frittata

This is one of my favorites. Frittatas are so easy to make and you can get really creative with them.  This one has 10 eggs, a few handfuls of spinach thats been chopped, one onion thats chopped, cooked sausage, a handful of chopped grape tomatoes, salt, pepper, garlic powder, cayenne pepper, and paprika.
